This is a very frequently asked question from our entire readership. And our
Inner Circle Members are always perplexed knowing that tomatoes are not really
a good combination with the foods they've been eating them with all these years
i.e.
Pasta, Breads, Rice and all those foods that tomatoes just don't combine with
for optimum digestion. A big reason for this is the acid in the Tomato (especially
cooked tomatoes) retards the digestion of the alkaline digestion that takes
place during starch digestion.
Before I give you this week's recipe which is "TOMATO BASIL SALAD"
let me share with you some facts about the Tomato, which should prove to be
useful when you want to do some research on this very popular food.
Scientific Name: Lycopersicon Esculentum
A cup of sliced tomatoes contains only 25 Calories, mostly from carbohydrate,
but more than 20% from protein.
Tomatoes are good sources of Vitamins A & C and lycopene, and they contain
a healthy amount of potassium.
They are in season from May through mid-November.
The big question: is the tomato a fruit or vegetable? Answer: Fruit - according
to the California Tomato Commission
Now about this week's recipe
But first let me rid the confusion about
tomato being a fruit, it's actually a Fruit Vegetable, and will combine well
with all the other Fruit Vegetables along with Lettuce and Celery.

TOMATO BASIL SALAD:
This is a very easy salad with no fuss especially when you are in a hurry.
Slice 3 Plum Tomatoes (or regular Tomatoes if Plum Tomatoes are not available)
in one eighth inch slices. Pour one half ounce of Extra Virgin Olive Oil over
the top of the Tomatoes. Then throw some freshly chopped Basil over the top
of that too. Now sprinkle some garlic powder on top of that. Now grind up 4
ounces of raw unsalted Cashews in your coffee grinder and sprinkle that on top
of this whole recipe and watch out. This really kicks. Very easy and incredibly
delicious.
