Top of the day to you
I am so glad to see so many requests coming in for different recipes. I have
been asked a lot for some dips. What can we have to liven up meals and snacks
for the kids and for adults for that matter??
I was down on the beach today watching the World Lifeguard Competition when
I thought of this one for you.
Just a side note here
we are so blessed to be living in North America
where things are so doggone cool. Well hot it was today in the upper 90's and
I could really feel it when I was into my 40th mile of a 50-mile bike ride.
Saw the competition where they did the big swim. I feel the swim and gymnastics
has to create the best bodies. It's so inspiring to see all this and I guess
that is one of the bonuses for joining the gym/fitness centers
to be around
the healthy bodies.
I personally don't do well in those settings as the outdoors with the fresh
air and the birds singing and the fragrances are just too much to pass up for
the indoors with air conditioning and a TV with bad news going on all the during
the exercise program.
Anyway check this recipe out.
INGREDIENTS:
4 ears of fresh White Sweet Corn
1 Avocado
A dash of Cayenne Pepper
One quarter teaspoon of Basil
One quarter teaspoon of Parsley
INSTRUCTIONS:
Remove the kernels from the 4 ears of Corn and put them in your blender or
your Vitamix www.vitamix.com/household (use code AMC1 for discount) with the Avocado (removed from the
Shell and Seed of course
wow, that would be kind of gnarly wouldn't it?)
Blend at very slow speed just to mix it all up all the while putting the Cayenne
Pepper and Basil in the mixture to mix well. It shouldn't take any more than
a minute at the most just to get it blended well.
Then pour the mixture into a soup bowl and sprinkle the Parsley over the top
to garnish it so to speak. You know this is just sooooo good that you can eat
it just like that. But a lot of people like it as a dip for any vegetable you'd
like other than tomatoes which are actually fruit vegetables which can be found

You can use this over PASTA dishes and is incredible in Baked Potatoes and
if you like chips and salsa it can be used in place of salsa, as the tomatoes
