Yuck is the same response I get from about 70% of all the folks I mention OKRA
to. I used to shy away from it like I did Spinach when an old classmate, Reid
Morrison, in the 4th grade told me he hated spinach at a school luncheon. Well
coming from a little island in Canada (Prince Edward Island) I never heard of
spinach before so I thought I hated it to.
As the years rolled on when I started making health my first concern and not
my last resort I thought I'd try spinach and lo and behold, it was quite good.
Of course when you cook it to mush then it becomes a slimy mess that really
doesn't nourish the body that well anyway.
Well I definitely didn't want to try OKRA because every time I asked someone
what it was, especially here in the south, they always referred to it as 'Fried
Okreee'! And I always knew "The more you fry, the sooner you die!"
so I didn't want that. And so I started asking around on ways to cook it. A
lot of folks stewed it and it was just a slimy mess that was just like that
spinach mess I just spoke about.
So I thought why not experiment with it. Son-of-a-gun if it wasn't incredibly
delicious. Check this out. I especially like it raw with a Tomato and Orange
Bell Pepper. But here's the best way I've found to cook it.
INGREDIENTS:
---- 1 Sweet Onion
---- 1-Ounce of Olive Oil
---- 1-2 good size Tomatoes
---- 1 Stalk of Celery
---- 10-15 Okra
---- 1-quarter Teaspoon of Oregano
THE RECIPE
In a skillet and on a medium flame, put the 1-Ounce of Olive Oil and then the
copped Onion. Let the onion start to get clear and then put the copped Celery
into the skillet and mix well. Let cook for another 3-4 minutes and put the
cut Tomatoes adding the 1-quarter Teaspoon of Oregano.
When this gets to the desired cooking state, shut the stove off and put the
Okra into the mixture and then cover the skillet and let steam in it's own juices.
In about 3 more minutes pour into a bowl and have this with any Protein Meal.
The Okra will still be firm and not that slimy mess we associate Okra with.
Now here is a real perk to this. If you have trouble going to the bathroom,
let me tell you
you'll not hop, skip or jump, I'll guarantee you, you'll
be dashing. It's a wonderful thing again.
