Top of the day to you

Yesterday a great friend of mine (Stillman Rice) who runs a very high tech gym in town & I went down to get the last of the very few mangoes that were available this year. His 12-year old son was away for a couple weeks so the timing was just right as this was the very last of the excellent mangoes that Ed Ensey in Merritt Island has. I don't know if he ships or not but if he does I will surely let you know. He only has 5 acres of them so I can't say for sure.

But when Stacie (Stillman) and I got back I made a recipe that … well you know when someone is sucking the juice out of the bowl, that is a good indicator. So I thought I'd let you know about this one, as this was truly one of my best.

Now it's also great to see someone take what I teach with nutrition to the next level and when you see the result of excellence, it's a great motivator for me to keep on going. This guy really let's the dignity of his example shine through and it's not much wonder he has the success he does. Everyone says, I want to look like that and they plug away at it.

And one other little side note as I move into this week's recipe. I was in Publix (our local grocery store chain and a very good one for produce I might add) and I was picking out some tomatoes when I saw a guy in wheel chair (Pete was his name) coming over. I gave him some room and I watched how he was picking the tomatoes out. I couldn't help myself so I offered my help.

I told him to get the ones with the richest color and gave slightly to the touch. Since they were on the vines, one last thing he needed to know was the ones that popped right off the stem with the other two things in mind would be the best of choice. So I asked him what he was going to make with them. He said, tacos. Well I thought I would be a total jerk seeing him with a basket full of chips, hamburger meat and cheese if I didn't at least offer an alternative hoping that he wouldn't get his feelings hurt. So I was tactful … believe it or not!

I mentioned this week's recipe to him and he put everything back and said he would try it…Bless his heart as he told me he has just had a stroke which is why he was in the wheelchair.

So after a 30-mile bike ride with my friend, Chris LeBlanc, I got a call from Pete telling me I have his attention. This was 1000 times better than those tacos he was initially buying the tomatoes for not to mention how much cheaper this recipe was than the tacos. And he asked to be sure to put him on my weekly recipe messages. So here we go with a really great recipe. Now Gayle Carson, I know you can like this one as I know you have all the ingredients…so back off!

And Joe Polish, you can do this one too! You'll be huge. Thanks for the book.

THE INGREDIENTS:

---- 1 ounce of Olive Oil
---- 1 small batch of Green Onions (about 5 in the batch) sometimes
called Scallions
---- 2 stalks of Celery
---- 2 medium size Tomatoes
---- 1 Orange Bell Pepper
---- 1 Zucchini Squash
---- 1 Yellow Summer Squash
---- One quarter teaspoon of Oregano
---- One quarter teaspoon of Basil
---- One eighth teaspoon of Cayenne Pepper
---- 2 ounces of Cashews
---- One half pound of fresh Tilapia Fish

THE RECIPE

In a skillet on a medium heat, put the 1-ounce of Olive Oil and then the chopped Scallions. Turn around and cut the Celery up into about one-inch slices and put in the skillet. Then cut up the Tomatoes up into small pieces and put into the skillet and at that time put the one-quarter teaspoon of Oregano, one-quarter teaspoon of Basil and one-eighth teaspoon of Cayenne Pepper. Stir the mixture around and let simmer for about 1 more minute. Then cut the Orange Bell Pepper in small pieces and put in the mixture. Now for the final stage, take a cheese slicer and thinly slice the Zucchini Squash and the Yellow Summer Squash into the mixture. Mix thoroughly and then pour it into a large bowl (I eat everything in a large salad bowl.) then pour the ground Cashews up and pour over the top of this.

Let this sit while you put the 2 small pieces of Tilapia Fish Filets in the same pot the vegetables cooked in along with about one-quarter inch of Distilled Water. Bring the water to a boil and immediately shut the stove off. Wait for exactly 3 minutes and the Fish will be done. Put the Fish over the Vegetable Mixture and enjoy. I have never had anyone who likes fish ever tell me this wasn't just flat delicious. The Tilapia is a very clean fish and cooks up easily.

I feel if you are going to eat fish, let's be sensible about it and eat the cleanest fish and cook it the least harmful and I feel poaching it like this really does the trick.

I haven't recommended a song in a long time and my younger brother Gary in Vancouver re-introduced an old favorite of mine when he was down for Christmas this year. Her name is Etta James and the song is Don't Misunderstand! Now I'll guarantee when you are snuggling up to your spouse when this song is playing…WATCH OUT!
