"Quick High Protein Dinner"

The top of the day to you

I was going to get my yard all cleaned up and had an estimate of $2000.00 to just clean up all the trees and planters. So I got to thinking of what better workout than just get a shorter bike ride of about 25 miles in and do the yard work myself.

Well I have to tell you how much respect I have for those in the tree business. Boy Howdy! A person who can conquer trees can conquer just about any type of physical work. But it's fun sweating like the dickens and accomplishing that sort of thing.

But I really outdid myself today with the bike ride and the Palm Trees (3 of them) I completely cleaned. Now let me tell you that they were all between 30-40 feet high and the squirrels were not too happy about me disturbing their homes. But I honestly apologized to them as they were chattering like crazy. Sure hate to disturb nature but those trees were too close to my house and with hurricane season upon us, I felt it was time.

By the way, for all those who don't know it, hurricanes are very good for our economy as so many folks come here to embrace the grandeur of it all. Surfers flock to the area along with those storm freaks who track them all. It's a hoot when you think of it.

Anyway, after 6 hours with the yard work and the bike ride, I wasn't in the mood to be in the kitchen too long preparing food and I really needed a good protein meal to wind off the day.

This was a real surprise to even me as to how filling it was and how very delicious it was. And it had TOFU in it. SO many people who hear from me each week have been after me to give out a recipe with Tofu in it, as they are interested in knowing how to prepare a meal once in awhile without all the meats and stuff like that.

SO here's all you do. And one more thing about this…IT'S CHEAP AS YOU CAN GET and is very high in Protein. But most of all it was real fast … all within 10 minutes from start to finish.

INGREDIENTS:

1 pound of Tofu (I bought mine in the organic produce section of my
favorite grocery store (PUBLIX)
1 small bunch of Scallions
1 ounce of Olive Oil
2 single stalks of Celery
10 Spears of Asparagus
1 quarter Teaspoon Basil
1 head of Broccoli (use just the flowerets and save the stems for another recipe)

THE RECIPE:

In a cooking pot on a medium heat put the Olive Oil and the Scallions (cut in 1-inch strips) and let cook for 1 minute while you are cutting the Celery in 1-inch lengths. Then add the Broccoli flowerets along with the Celery to the pot and then sprinkle the Basil over it! Within 3 more minutes it will all be cooked just right. Shut the stove off and cut the Asparagus into small pieces of and stir it all up. Then put the Tofu (cut into one half inch cubes) in the pot and stir it all up. It will heart the Tofu just enough. Put this in a dish and enjoy it. Now as 'hongree' as I was, I ate the whole thing but this could serve two people if you wanted to.

I don't eat that much Tofu but this was a real winner if you want something that will truly satisfy your hunger, while being easy and fast and cheap to boot.

I met a gentleman at the grocery store tonight and he looked like he needed some help picking out the best grapes so I offered my assistance. He was in a wheel chair and had an English accent. He was just in from London. We both agreed that since he worked too hard to provide for his family without a thought that someday he would be faced with the hassles of not taking care of his health along the way that he wished he had have taken more time for himself and his health

He says, "I'm reading more and fussing less. I'm sitting in the yard and admiring the view without fussing about the weeds in the garden. I'm spending more time with my family and friends and less time working. Whenever possible, life should be a pattern of experiences to savor, not to endure. I'm trying to recognize these moments now and cherish them. I'm not "saving" anything; we use our good china and crystal for every special event such as losing a pound, getting the sink unstopped, or the first Amaryllis blossom.

I wear my good blazer to the market. My theory is if I look prosperous, I can shell out $28.49 for one small bag of groceries. (It was not too small when I got through with him as we really loaded up on the fresh figs as he was saying that he wished he could find some figs somewhere. Son-of-a-gun if we weren't 2 feet from them and he couldn't see them. So I got him 3 flats of them.)

He also said, "I'm not saving my good cologne for special parties, but wearing it for clerks in the hardware store and tellers at the bank. Someday" and "one of these days" are losing their grip on my vocabulary. If it's worth seeing or hearing or doing, I want to see and hear and do it now.

I'm not sure what others would've done had they known they wouldn't be here for the tomorrow that we all take for granted especially our health. I think they would have called family members and a few close friends. They might have called a few former friends to apologize and mend fences for past squabbles. I like to think they would have gone out for a Chinese dinner or for whatever their favorite food was.

I'm guessing; I'll never know. It's those little things left undone that would make me angry if I knew my hours were this limited. Angry because I hadn't written certain letters that I intended to write one of these days. Angry and sorry that I didn't tell my wife and parents often enough how much I truly love them. I'm trying very hard not to put off, hold back, or save anything that would add laughter and luster to our lives. And every morning when I open my eyes, tell myself that it is special. Every day, every minute, every breath truly is a gift from God."

I asked him if he agreed with this phrase I coined several years ago, "Never give up your health in your quest for wealth, as you WILL spend all that wealth to regain your health." And he said… POSITIVELY WITHOUT A DOUBT!
