Happy New Year Everyone!
Of the over 2000 people on my weekly e-mail health nugget list, I have a myriad
of personalities and belief systems. My whole foundation on nutrition is two
fold:
1) "Combine When You Dine"; 2) "Eat Good Stuff So You'll Always
Be Tough!"
I apologize if all of my recipes do not meet the approval of those who are
Fruitarians; Breatarian's; Vegans; Lacto-Ovo Vegetarians; Lacto-Vegetarians;
Ovo- Vegetarians; Vegetarians; Macrobiotics; Raw Foodists. Gosh the list is
endless about the different belief systems when it comes to Nutrition. Then
of course we have the people who cheat a lot and do an incredible amount of
supplementation. I don't want to offend anyone with what I'm e-mailing each
week as I appreciate all of you very much for your verve and for your excellence
or you would have never been put on the list that I cherish very much.
Most of you I've known for over 20 years. And for all of you, no matter how
long we've known each other, I am sincere when I say I would like to be an adjunct
to your health as when you're sick, then the people who love you the most will
be the ones who suffer the greatest amount. And before I share this week's recipe,
let me say this one piece of encouragement. I do a lot of seminars and so many
in my audience tell me, "Come on Doc, we have to die of somethin'!"
My response to that is a flat out, "No you don't. I realize we are all
the road to death, there's just no need to jump in the passing lane!" We
have to eat anyway, so why not make it the best. We expect the best in everything
else, so let's make it good stuff so we'll always be tough!
Check out this kind of stuff for a recipe. I rode my bicycle 30 miles today
in the 80-degree sunny weather and it was a gas to say the least, so when I
got home I wanted to eat something that would rock-n-roll. It's called my "Lemon/Salmon
Dinner"!
Every time I cook fish which is usually about once a week, I cook it in Freshly
Squeezed Lemon Juice! I get the fish fresh from the market @ Jimmy Hull's in
Ormond Beach! Hands down, he has the best in the business. I've known him for
30 years and without a doubt, he has the same views about what we have a passion
for. Get the best and chill out on the rest.
INGREDIENTS:
One half cup fresh squeezed Lemon Juice
One half pound fresh Salmon
6 Small Yellow Summer Squash
1 Medium Size Zucchini Squash
Some Fresh Basil Leaves (10 of them finely chopped)
A dash of Cayenne Pepper
Some Fresh Rosemary Leaves (About 1 ounce of it chopped up)
4 Ounces of freshly Ground Raw unsalted Cashews

In a skillet on a medium heat, put one half cup of Fresh Lemon Juice. Place
the Salmon in the skillet and put the Fresh Basil on the top of the Salmon.
Then place the Squash in 1-inch slices around the Salmon topping the Squash
with the Cayenne Pepper and Rosemary. Leave this on the medium heat for no longer
6-8 minutes max. When it's done sprinkle the Freshly Ground Raw Unsalted Cashews
all over it

PS My C/D of the Week, Last week when I was at Barnes and Noble, I found an
old classic, which should be in everyone's music library. When I saw it, I leaped
on it and put it in the gospel section until I went out to the car to get my
wallet. I never go into a music store with my charge card. A cardinal sin for
me. The C/D is called "East Bay Grease" by Tower of Power! It starts
my workout everyday ever since. My bird loves it and the neighbors turn their
hearing aids down 'cause "The Mango Man" is rockin' on his trampoline.
