"Pineapple/Orange Sorbet"

Happy Valentine's Day everyone!

I fixed this recipe this morning and it was a hit. I thought I would be able to save some for another setting, but nooooooo, I had to eat it all. It was delicious! And this is a very easy recipe to prepare.

INGREDIENTS:

  • 1 Whole Fresh Pineapple
  • 2 Navel Oranges
  • 4-6 Mint Leaves for a garnish
  • 1 Kiwi Fruit
  • 1 Pint of Freshly squeezed Orange Juice.

Freeze 1 pint of Freshly squeezed Orange Juice. The next morning remove the peeling and the core from a whole Pineapple and dice it up. Then peel and dice up 2 fresh Navel Oranges. Put the Pineapple and the Oranges into a blender with the frozen Orange Juice. Blend until smooth (approx. 1-2 minutes)! Put into ice cream bowls and put some Kiwi Slices atop of the Sorbet and garnish with a Strawberry and the Mint Leaves! All I can say is that this is an awesome way to start the day.

Am listening to an excellent C/D as I write this recipe by Dr. John entitled "In A Sentimental Mood". I first saw Dr. John in Odessa, Texas almost 30 years ago when he was playing with the Allman Brothers. He was good then and almost stole the show, as I never heard of the Allman Brothers. I went to see them because they were from Daytona Beach. They were super. I was in one of those radical moods just coming from a hard in the oil fields. So after 30 years I thought I would try this one by Dr. John and it's a winner for your listening pleasure. Great to get some work done in the solitude of your office. ENJOY!

This Week's Fitness Tip

When you are sitting at your desk and need a quick fitness boost, try just standing up without pushing yourself out of the chair and when you sit down again, sit without using your arms to sit back down. Now that doesn't seem like much but it actually is. You will be using a whole new muscle group and amazingly enough, your body actually uses 102 moves to stand then the 102 moves again to sit back down if you do it like I'm suggesting. Do this 5 times and what a difference it makes. Paraphrasing the NIKE Slogan, "Just Do It" is appropriate here. Got a great at the desk tip for next week. Tune in then.
