The top of the day to you!
I am now just getting back from The National Speakers Association's Annual
Convention in Washington, DC and was gone during my weekly recipe message. So
I am going to catch up with two to you this week. These are very easy to prepare
and to say the least, outstanding!
Since I like to eat food when it's in season, here's the first recipe of all
the ingredients that's in season. And since we are in the peak of the Summer,
I thought it would be good to call this one a Summer Treat as it truly is
check
it out!
#43 = "Summer Treat"
INGREDIENTS:
- One half pound of Fresh Red Seedless Grapes
- One half pound of Fresh Green Seedless Grapes (always pick these when they have a slight yellowish tint to them as that's when they are the sweetest)
- One pint of Fresh Blueberries
- One pint of Fresh Strawberries
In a large Mixing Bowl put the two kinds of Grapes and slightly mash them with
a fork just to get some juice in the bowl. Then add the Strawberries and the
Raspberries and mix well. This is good all by itself. I usually eat the whole
thing myself but it could easily fuel two hungry immigrants.
#44 = "Cashew Mayonnaise"
Now for those who like Mayonnaise, here's an awesome recipe for Mayonnaise.
INGREDIENTS:
- Four Ounces of Raw Unsalted CASHEWS
- Four Ounces of Distilled Water
- One Red Bell Pepper
- One Ripe Tomato
In a food processor, put the soaked Cashews that have soaked in the refrigerator
in the 4 ounces of Distilled Water over night, and blend up with the Tomato
and the Red Bell Pepper (that has the seeds and core removed) until smooth.
This is a topping for just about any non-starchy vegetable dish! I made this
